- 1 eggplant.
- Paprika.
- 1 medium-sized onion.
- 100 gr of Parmesan cheese.
- 50 gr of white cheese.
- 50 gr of Spanish Serrano ham.
- Salt and pepper to taste.

DIRECTIONS:
Thinly slice the eggplant. Beat
the eggs with salt and pepper. Add the egg mixture, the eggplant,
the white cheese, grated. Spread a layer of ham, then a layer
of paprika and thinly sliced onion. Finally the Parmesan cheese.
Cook for 15 minutes at low heat. Serves 6.
