INGREDIENTS
- ½ kg of fabes (a Spanish type of white bean).3 Asturian “ morcillas” (Spanish black sausages from the Northern region of Asturias)
- 1 piece of Serrano ham (about 100 gr). ¼ kg bacon.
- 1/2 pork’s ear.
- 1/2 glass of oil.
- 1 onion.
- Paprika.
- 2 garlic cloves.
- Salt .

DIRECTIONS:

Soak the fabes beans in the morming and strain when you’re about to cook them. Put a big pot with plenty of water on the stove and cook the beans. When it boils, add cold water. When it boils again, add the onion, peeled and cut into fourths, the garlic cloves, a splash of oil and the paprika. Cook for one hour. Add the pork’s ear, the bacon and the ham. Cook for another hour and add the “morcillas”. Cook for another half hour and add salt and turn the heat off. In case the fabe beans are still a bit hard, cook longer.
