700 gr white beans.
- ½ garlic head.
- 1 bayleaf.
- 1 sausage or “morcilla” (black Spanish sausage).
- 4 tablespoons of oil.
- 2 small onions.
- 1 teaspoon of paprika.
- Salt.

DIRECTIONS:
Bring
the white beans to a boil. Add the garlic head, the bay leaf,
one whole peeled onion and the sausage or morcilla. Cook for two
hours, adding cold water when necessary.
Meanwhile, stir-fry the remaining onion, grated. When it’s
golden brown, add the paprika and some of the beans cooking water.
Pour all this into the white beans saucepan, add salt. Take out
the sausage, slice and bring back to pot. Cook for another 10-15
minutes and serve.
